This summer I've really been enjoying eating local foods and trying to cook meals each week based upon what I find at the farmer's market. Lately I've made dishes with a lot of kale, rainbow chard, carrots, blueberries, tomatoes, onions, green beans, beets, beet greens, peppers and eggplant.

Rainbow Sausage Saute
Here's a quick and easy week night dish that requires pretty minimal time and prep work.
1 bunch rainbow chard, chopped - I pre-wash and chop my chard the day I buy it at the farmer's market so it's ready to go during the week
1 sweet onion, diced
1 shallot, diced
1 garlic clove, minced or 1 tsp pre-minced garlic
1 handful shredded carrots - buy pre-shredded or shred yourself
4 Applegate organic chicken sausages, sliced
A few tablespoons of lard - make sure yours is from a trustworthy source (I buy direct from my farmer), or feel free to use another Paleo fat of your choice
Heat up a few tablespoons of lard in a frying pan over medium heat
Add onions and shallots and saute until translucent
Add garlic, onions, carrots and swiss chard and continue to saute until wilted and soft
At the same time in a separate saucepan, heat up a little more lard and saute the sausage until each piece is browned and a little crispy
Mix everybody together, season with s&p
Enjoy this flavorful, vitamin packed dish!

Mine is a small step - I have sooo many things I want to remember to do and lately my iphone just isn't beating out a simple notebook in this department. So I bought a fancy little notebook (love these!) to keep on hand so I can jot down ideas, lists, to-dos and anything I want to remember later. Ohh how I love making lists. This method has always worked for me, so there's no reason not to stick with what I know works well.
If you're more of a smart phone/techie organization type, I'm also a huge Evernote fan. I love that I can use it on my phone and online. I save all my recipe ideas that I collect from others on there as well as gift ideas for friends and family and helpful health articles, to name a few. One of these days I'll show you how I organize my Evernote.
